Flaps 20 Cowboy Chili

This is the perfect chili to pair with a cold beer and good friends,

Dry:

3 tbls Chili Powder, 1 tsp Cayenne Pepper, 2 tsp Cumin, 2 tsp Garlic Powder,

2 tsp Onion Powder, 2 tsp Paprika, 21/2 tsp Salt, 2 tsp Pepper, 1 tsp Chipotle Pepper

1 tsp Ground Mustard and 2 tbls Flaps 20 Cowboy Rub.

Fresh: Chopped

2 tbls Butter, 3 Anaheim Chilies, 3 Pablano Chilies, 2 Green Bell Peppers

2 Jalapenos, 2 Yellow Onions, 2 tbls minced Garlic, 2lbs Ground Beef

3 slices Bacon

Wet:

2 Cups Tomato Sauce, 1 cup Tomato Paste, 12 oz Beer, 1 Cup Chicken Stock

1 Can Light Kidney Bean, 2 Can Dark Kidney Beans

Add dry ingredients and mix well until blended and set aside. Chop bacon and add to pot, stirring until brown then add chopped onion, peppers and butter. When onion turns translucent add garlic and 1/4 dry dry season mix well and simmer for 5 minutes. Add ground beef and half the remaining dry season mix stir until beef is fully cooked.

Once ground beef is cooked add Tomato sauce, Tomato Paste and Chicken Stock and mix well. Simmer mixture for 20 minutes then add beans and remaining Dry season mix, cook on low for 30 min to 2 hours stirring occasionally.

Grab a beer, top chili with green onions, Sour Cream or crackers and enjoy.
